Where the boat comes in

A bay called home

Snow crab travels alive in an oxygen pack. Black tiger prawns are frozen at sea with the shell on. Before any of it reaches a box, it comes off a boat.

Three from the cold room

Salmon, then prawns

A pre-sliced salmon tray, cooked tiger prawns that need no stove time, and raw black tiger for the grill.

Down where it is dark

The belly of the tuna

Otoro is the fatty belly: fine marbling, silky texture and a mild ocean flavour. Pre-portioned, so a sharp knife and a little soy are all it needs.

Two temperatures

Frozen at -18°C, or chilled

Six packs are held at -18°C until they reach you. The live snow crab and the marinated drunken shrimp travel chilled and go straight into the fridge.

  • Sashimi and otoro thaw overnight in the fridge, then slice across the grain.
  • Cooked tiger prawns need no stove time: thaw and serve cold.
  • Never refreeze a pack after it has thawed.

Three notes from the cold room

Before the box reaches you

What happens between the boat and your fridge, starting with the packs that are not simply frozen.

1 Frozen at sea Black tiger prawns are flash-frozen with the shell on, so the flesh keeps its bite.
2 Weighed to 2 kg Every pack in the shop holds 2 kg and is labelled with the cut.
3 Chilled, not frozen Live snow crab travels in oxygen; drunken shrimp travels marinated.

Notes from the kitchen

How to cook the eight

Salmon tray: thaw overnight, slice across the grain, serve cold.
Snow crab: steam it whole, then crack the legs at the table.
Otoro needs nothing more than a sharp knife, soy and wasabi.
